Want to hear more about your onion and garlic powder uses! I weirdly always feel guilty when I use them. They feel like cheating or trashy like they’re only for chips or processed dips.
yes they are definitely maligned but i think are super useful ingredients for adding umami and depth. you have to use them sparingly because they are STRONG. I often add to soups and broths because the bump up the flavor. But again, like 1/4 teaspoon per quart is plenty or it starts to taste too strong. I guess I use it the way I use nutmeg, it just kind of hangs out in the background unnoticed but it can add so much to a dish.
I love it in tomato sauce, soups, to season a roast chicken, even in a salad dressing :D remember, a little goes a long way
